Economical Chicken and Rice Casserole

This chicken and rice casserole is an affordable, hearty, and delicious meal that can feed a family of four with ease. It's easy to prepare and makes for a perfect weeknight dinner.

Ingredients:

  • 2 cups uncooked white rice
  • 4 boneless, skinless chicken thighs
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 cup frozen peas and carrots mix
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).

  2. Prepare Chicken: Season the chicken thighs with salt, pepper, paprika, and thyme. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear the chicken thighs for 2-3 minutes on each side until they are browned. Remove and set aside.

  3. Cook Onion and Garlic: In the same skillet, add the remaining tablespoon of olive oil. Sauté the chopped onion and minced garlic until they are softened and fragrant, about 5 minutes.

  4. Combine Ingredients: In a large mixing bowl, combine the uncooked rice, cream of mushroom soup, cream of chicken soup, chicken broth, sautéed onions, garlic, and the frozen peas and carrots mix. Mix well to combine.

  5. Assemble Casserole: Pour the rice mixture into a 9x13 inch baking dish. Place the seared chicken thighs on top of the rice mixture, nestling them into the rice.

  6. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the rice is tender and the chicken is cooked through.

  7. Serve: Remove the casserole from the oven and let it sit for 5 minutes before serving. This allows the flavors to meld together and makes it easier to serve.
